Cub Scout Cake

This is a cake that I donated to our Scout auction. We don't have many scouts but they can use all the help they can get. This cake is a 9" two layer chocolate butter cake with buttercream icing and a FBCT cub scout logo on top.

There were quite a few cakes there! Julienne's family bought my cake for $52.00!! I sure hope they enjoy it!!

Mini Meatloaves


I thought I would try something different with meatloaf. It was a great change from the same ol' thing!!

1/4 cup each of green, yellow, orange and yellow bell peppers, diced
1/2 cup onion, diced
1/2 cup panko bread crumbs
1 egg
1 teaspoon Italian seasoning
1 teaspoon dried parsley
1/2 teaspoon sea salt with garlic
pepper to taste
shredded mozzarella & provolone cheese mix
1 1/2 lbs lean ground beef
bacon (I used turkey bacon)

Mix all ingredients together except for the cheese.

Separate into fourths and pat out into a rectangle patty. Top with some of the cheese.

Roll patty and wrap 2 pieces of bacon around the roll.

Place on a broiler pan and cook at 350 degrees for around 30 - 40 minutes. Top with extra cheese.

Enjoy!!

Cake in a Mug

My sister Jody sent this recipe to me in an email. I thought it was interesting and I have never heard of it before, even though it's all over the internet!! I can't find who the original recipe owner is so if anyone know, please let me know!!

Here's how it goes:


A RECIPE EVERYONE SHOULD KNOW


The Most Dangerous Cake Recipe



5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your microwave safe mug in the microwave and cook for 3 minutes at 1000 watts (high).
The cake will rise over the top of the mug, but don't be alarmed!

Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous).

And why is this the most dangerous cake recipe in the world?

Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Carlee had her own made with the egg replacer. I was curious to see if they would come out the same!

It sank right before we took it out!

It came out of the mug easily. To me the cake was really heavy, dense, tough, but the flavor was good. don't know if it was stirred too long from some little helpers! Next time I may try and add something else to make it a little lighter. Notice there is no baking powder or soda in the recipe!! Hum! Anyone have any suggestions? I know my cake buddies will know!

Carlee enjoyed to ice cream very much!! She wouldn't even touch the cake. Maybe she though it looked weird!

Valentine Cupcakes


I made these cupcakes for my daughter's class party. I cheated and used store bought frosting! I can't remember the last time I did that.

Toolbox Cake


This was a cake for my friend's husband. His hobby is woodworking. I covered the base with marshmallow fondant that was a marbled brown to look like wood. The cake is chocolate and is covered in buttercream. The hammer and nails are also made of fondant. I hope he liked it!

Rodeo Cake

This is a cake that was donated to the ISU Rodeo Association. Oh My Gosh!! I almost forgot to make it!!! And since I almost forgot to make it I didn't get all of my Valentine cookies done!! Holy Cow!


I had something else in mind to do but since I was in a time crunch, this is what it is.! It's a yellow butter cake with chocolate hazelnut icing. The horse and rider and the funny looking horseshoes are made from chocolate. The other funny looking things on the side are supposed to be lassos. lol!!! Sheesh!

Valentine Cookies

There were Valentine cookies everywhere! Now there are not any in site! They went fast! I do have some unfinished ones left and I'm not sure if I'm going to be able to get to them!!

So I thought I would give a few tips on how I do my cookies. Sorry...no recipes!

Use your favorite sugar cookie recipe or find some great ones on Cake Central. Cut and bake as usual.

Thought I would show you the rolling pin I use. It works best for me since RA has left me with hands that don't work properly.


As soon as your cookies come out of the oven, use something that will flatten your cookies out. I find that my fondant smoother works best.

When your cookies are cool, outline the cookie with an icing of your choice. I use a glaze and then use royal icing for the details. I also flavor my royal icing using the same flavorings that I used in the glaze.

Quickly pour thinned our glaze onto the cookie before the outline has a chance to dry. It gives it a nicer appearance. If you are outlining with a different color, let it dry for a few hours before you filling it in. That way you will prevent the two colors from bleeding.

Decorate as desired!

This is what my table looks like while I wait for the glaze to set up. It sometimes takes two days to do the various steps! These are not "quick" cookies!!

Happy Birthday JoMax and Ryan!

My oldest son JoMax and my youngest son Ryan have their birthdays only two days apart. JoMax was yesterday and Ryan's is tomorrow. Everyone gets tired of eating cake and I can't mail Ryan a cake because he lives on the east coast. Soooooooo....they get cookies!! I also gave them some Valentine cookies.

Who Wants Ice Cream?!!

This last Saturday was our shopping day in Idaho Falls. Kami, Collin, Carlee and I went to Sub Zero. I didn't even know it existed until I did the bridal shows last month. Sub Zero was one of the vendors there. When I saw how they make the ice cream, I knew I had to take the kids there and let them see the ice cream made right in front of them.

The kids loved putting their little hands in the frost as it came spilling out of the bowl. Wish I had a picture of them doing that!!

Kami and the kids all had chocolate with Oreo cookies added in. Kami of course had dark chocolate! (She takes after me!) For me...there were too many flavors and combinations to choose from so I wanted to try the mixed berries. I was so good!


I couldn't believe that the kids ate all of it! They never finish anything it seems like!!

YEAH!!! Bring it on!!!!!

Vroom!!

Here's a cake that I did for my friends Hunter and his Dad Sam. Hunter Loves the movie "Cars" so that's what he got


I made this cake using a FBCT (frozen buttercream transfer) on the top. The sides have a diamond pattern that I filled in with black and white icing to look a little like a checkered flag.


I sure hope they liked it!!!

My Third Reaper!!

My Grimmy's are becoming popular!!


This cake was done for a friend that lives in Mackay. Her daughter wanted to give her a surprise party and asked if I could do a Grim Reaper for her Mom.



Reapers just may become my signature cake specialty!! So if you need an "Over the Hill", "older than Dirt" or one that just lets them know they have a foot in the grave, you know who to call!!!

Baby Shower and Pink Cupcakes

My Daughter Kami and her mother-in-law, Tina (my friend) gave a baby shower for a friend (Julie) that is in their ward. Kami and Julie are also Activity Day leaders together and they have a lot of fun!

Kami and Tina came up with the idea to have a Spa Baby shower! Julie is also having a girl so everything was pink!

There were games to play. Then we ate a visited. Then Tina put on a relaxation video that lasted for about 10 minutes, probably the most peaceful 10 minutes any of them have had in a while!! Then Kami had all the guests make their own relaxing bath salts to take home. I sure everyone had a great time!! Everyone was happy!

I of course had to make something! I made Pink Lemonade cupcakes. They were really good.

Oh and poor Carlee!!! I forgot and made the cupcakes with real eggs so she couldn't have any!!! I knew she would have a fit if she couldn't have one, so Joe thought maybe I should take the pink marshmallows that we had at home. In someways, I thought that it wouldn't work. Carlee would know that she wasn't getting a cupcake!!! Well when she started crying for one, I quickly put a marshmallow in a cupcake wrapper and put icing on it. It worked!! She ate two of them and then she was fine!! Didn't even want any cupcakes later!! Wheeeeww!!!


Collin surprised me by eating the whole cupcake!!
He usually only licks the icing off, but he ate it all!!

Here just a picture of all the food Kami and Tina served!! There was chicken salad in cream puff pastry and lots of veggies and fruit. Tina also made a real yummy dessert and I forgot to take a picture of that too!! You can check out Kami's post on her blog also!! She has some fun ideas on there!
